Ingredients
  

For the chicken
  • 4 pieces chicken thighs or breasts
  • 2 tablespoons olive oil for drizzling the baking sheet
For the breading
  • 1 cup breadcrumbs fresh breadcrumbs recommended
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 2 large eggs beaten for breading
  • 1 cup all-purpose flour

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a shallow bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper together.
  3. Set up a breading station with the flour, beaten eggs, and the breadcrumb mixture.
Breading and Baking
  1. Dredge each piece of chicken in flour, dip it in the eggs, and coat it with the breadcrumb mixture.
  2. Place the coated chicken on a baking sheet that has been drizzled with olive oil.
  3. Bake for 25-30 minutes or until the chicken is golden brown and crispy.
