Preparation
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- Peel and slice the onions into thick rounds, about 1/2 inch thick, then separate them into rings.
Making the Cheese Sauce
- Melt butter in a saucepan over medium heat, then whisk in flour and cook for 1 minute.
- Gradually whisk in milk until the sauce thickens and is smooth, then stir in most of the Asiago cheese, salt, and pepper until melted and combined.
Baking the Onions
- Arrange onion rings in the prepared baking dish, then pour the creamy Asiago sauce evenly over the onions.
- Bake for 30-35 minutes, or until the onions are tender and the sauce is bubbly and lightly golden.
Finishing Touches
- Remove from oven, let stand for a few minutes, then garnish with fresh chopped parsley before serving hot.
Notes
For an extra golden crust, you can sprinkle a little extra Asiago cheese on top during the last 5 minutes of baking.
