  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1.5 cups milk
  • 1 cup Asiago cheese, shredded
  • 2 tbsp fresh parsley, chopped for garnish
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Peel and slice the onions into thick rounds, about 1/2 inch thick, then separate them into rings.
Making the Cheese Sauce
  1. Melt butter in a saucepan over medium heat, then whisk in flour and cook for 1 minute.
  2. Gradually whisk in milk until the sauce thickens and is smooth, then stir in most of the Asiago cheese, salt, and pepper until melted and combined.
Baking the Onions
  1. Arrange onion rings in the prepared baking dish, then pour the creamy Asiago sauce evenly over the onions.
  2. Bake for 30-35 minutes, or until the onions are tender and the sauce is bubbly and lightly golden.
Finishing Touches
  1. Remove from oven, let stand for a few minutes, then garnish with fresh chopped parsley before serving hot.

Notes

For an extra golden crust, you can sprinkle a little extra Asiago cheese on top during the last 5 minutes of baking.
