  • 2.5 cups All-purpose flour
  • 1.5 cups Granulated sugar
  • 1 tsp Baking soda
  • 0.5 tsp Salt
  • 1 tsp Ground cinnamon
  • 0.5 tsp Ground nutmeg
  • 3 Large eggs
  • 0.75 cups Vegetable oil
  • 1 tsp Vanilla extract
  • 3 Fresh apples medium, peeled, cored, and diced
  • 1 cup Chopped pecans or walnuts optional
Cream Cheese Frosting
  • 8 oz Cream cheese softened
  • 0.5 cups Unsalted butter softened, 1 stick
  • 3 cups Powdered sugar
  • 1 tsp Vanilla extract
  • Pinch of salt

Method
 

For the Cake
  1. Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking pan by greasing and flouring it, or lining with parchment paper.
  2. In a large bowl, whisk together the flour, granulated sugar, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, beat the eggs, vegetable oil, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined; do not overmix.
  5. Gently fold in the diced apples and chopped nuts (if using) into the batter.
  6. Pour the batter into the prepared pan and bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the cake cool in the pan on a wire rack for 15 minutes before inverting it onto the rack to cool completely.
For the Cream Cheese Frosting
  1. In a medium bowl, beat the softened cream cheese and butter with an electric mixer until smooth and creamy.
  2. Gradually add the powdered sugar, vanilla extract, and salt, mixing on low speed until combined, then increase speed to medium and beat until light and fluffy.
  3. Once the cake is completely cool, spread the cream cheese frosting evenly over the top.

Notes

For best results, ensure your cream cheese and butter are at room temperature for the frosting. Do not overmix the cake batter.
