Ingredients

Scones
  • 2 cups All-purpose flour
  • 1/4 cup Granulated sugar
  • 1/4 cup Light brown sugar
  • 1 tbsp Baking powder
  • 2 tsp Ground ginger
  • 1 tsp Ground cinnamon
  • 1/2 tsp Ground nutmeg
  • 1/4 tsp Ground cloves
  • 1/2 tsp Salt
  • 1/2 cup Cold unsalted butter (1 stick), cubed
  • 1/2 cup Whole milk
  • 2 tbsp Molasses
  • 1 Large egg
Glaze (Optional)
  • 1 cup Powdered sugar
  • 2-3 tbsp Milk
  • 1/2 tsp Vanilla extract

Equipment

  • Baking sheet
  • Parchment paper
  • Large mixing bowls
  • Whisk
  • Pastry blender
  • Measuring cups and spoons
  • Wire rack
  • Knife

Method

Scones
  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Whisk together flour, sugars, baking powder, ginger, cinnamon, nutmeg, cloves, and salt in a large bowl.
  3. Cut in the cold, cubed butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the milk, molasses, and egg.
  5. Pour the wet ingredients into the dry ingredients and mix gently with a fork until just combined, being careful not to overmix.
  6. Turn the dough onto a lightly floured surface and gently pat into an 8-inch round, about 3/4-inch thick. Cut into 8 wedges and place on the prepared baking sheet.
  7. Bake for 15-20 minutes, or until golden brown and a toothpick inserted into the center comes out clean. Let cool on a wire rack.
Glaze (Optional)
  1. Whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle over cooled scones before serving.

Notes

For best results, ensure your butter is very cold. Do not overmix the dough, as this can lead to tough scones. Enjoy these warm with a cup of coffee or tea!
