  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 2 large Eggs
  • 0.5 cup Vegetable oil
  • 0.5 cup Buttermilk
  • 1 cup Mashed cooked sweet potato
  • 1 teaspoon Vanilla extract
Honeybun Swirl
  • 0.5 cup Brown sugar
  • 1 tablespoon Ground cinnamon
  • 0.25 cup Melted unsalted butter
Glaze
  • 2 cups Powdered sugar
  • 3 tablespoons Milk
  • 0.5 teaspoon Vanilla extract

Method
 

Prepare the Cake
  1. Preheat your oven to 350°F (175°C) and thoroughly grease a 9x13 inch baking pan.
  2. In a large bowl, whisk together the dry ingredients: flour, granulated sugar, baking soda, ground cinnamon, ground nutmeg, and salt.
  3. In a separate bowl, combine the wet ingredients: eggs, vegetable oil, buttermilk, mashed sweet potato, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until they are just combined and smooth.
Create the Swirl
  1. For the honeybun swirl, combine brown sugar, ground cinnamon, and melted unsalted butter in a small bowl.
  2. Pour half of the prepared cake batter into your greased baking pan, spreading it evenly.
  3. Evenly sprinkle the brown sugar mixture over the batter in the pan.
  4. Carefully spoon the remaining cake batter over the cinnamon mixture and gently spread it to cover.
Bake and Glaze
  1. Bake the cake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the cake to cool slightly on a wire rack while you prepare the glaze.
  3. Whisk together the powdered sugar, milk, and vanilla extract in a bowl until the glaze is smooth.
