  • 1 cup orzo pasta
  • 4 cups vegetable broth
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups fresh spinach
  • 1 medium carrot, diced
  • 1 medium zucchini, diced
  • 1 medium bell pepper, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil for sautéing

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and garlic, and sauté until they become translucent.
  3. Add the diced carrots, zucchini, and bell pepper. Cook for about 5 minutes until slightly softened.
Cooking
  1. Stir in the diced tomatoes, vegetable broth, oregano, basil, salt, and pepper.
  2. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
  3. Add the orzo pasta and fresh spinach, cooking until the orzo is tender, about 8-10 minutes.
  4. Adjust the seasoning as needed and serve hot.

Notes

For a creamier texture, add a splash of heavy cream or cream cheese when serving. Mix and match vegetables to your liking. Check the pasta occasionally to avoid overcooking.
