  • 2 pounds boneless skinless chicken thighs (fat removed, cut into 1-inch pieces)
  • ¼ cup cornstarch
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons extra virgin olive oil
  • cup soy sauce
  • cup water
  • cup light brown sugar (packed)
  • 1 teaspoon sesame oil
  • 2 teaspoons garlic (minced)
  • ½ yellow onion (diced)
  • 2 large jalapeno peppers (sliced into thin rounds)
  • Sesame seeds (for garnish)
  • Cooked white rice (for serving)

Method
 

Preparation
  1. In a large mixing bowl, combine the chicken pieces, cornstarch, salt, and pepper. Toss to coat the chicken evenly. Set aside.
  2. In a medium bowl, mix the soy sauce, water, brown sugar, sesame oil, and minced garlic. Mix well and set aside.
Cooking
  1. Heat the olive oil in a large nonstick skillet over medium-high heat. Once hot, add the chicken to the skillet. Cook for 2-3 minutes on each side until browned and cooked through, reaching an internal temperature of 165°F. Transfer the chicken to a plate and cover to keep warm.
  2. In the same skillet, add the diced onion and sliced jalapenos. Cook until they soften, about 4-6 minutes.
  3. Add the cooked chicken back to the skillet along with the soy sauce mixture. Stir everything together and cook for another 2-3 minutes.
  4. Serve the Jalapeno Chicken garnished with sesame seeds over cooked white rice.

Notes

Adjust the heat by removing jalapeno seeds for less spice. Marinate chicken in soy sauce mixture for 30 minutes for extra flavor. You can add bell peppers, snap peas, or your favorite veggies. For variations, chicken can be substituted with shrimp or tofu.
