  • 1 box Jiffy corn muffin mix
  • 1 can corn (whole or creamed) Drain if using whole corn.
  • 1 can sour cream
  • 1/2 cup butter (melted)
  • 1 cup shredded cheese (optional) Try cheddar, mozzarella, or pepper jack.
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the Jiffy corn muffin mix, corn, sour cream, and melted butter. Mix everything well.
  3. If desired, stir in the shredded cheese, salt, and pepper to taste.
  4. Pour the mixture into a greased baking dish.
Baking
  1. Bake for 40-45 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  2. Let it cool slightly before serving. Enjoy!

Notes

For added flavor, feel free to add chopped jalapeños, bell peppers, or any other cooked meats like bacon or ham. Store leftovers in the refrigerator for up to 3 days.
