Ingredients
  

Biscuit Dough
  • 2 cups All-purpose flour
  • 1 tbsp Baking powder
  • 1/2 tsp Baking soda
  • 1 tsp Salt
  • 1/2 cup Unsalted butter cold, cut into cubes
  • 3/4 cup Cold buttermilk

  • Large mixing bowl
  • Pastry blender (or fork)
  • Baking sheet
  • Biscuit cutter (or knife)

Method
 

Preparation
  1. Preheat oven to 425°F (220°C). In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  2. Add cold butter cubes to the dry ingredients and cut in with a pastry blender or your fingers until pea-sized crumbs form.
  3. Pour in cold buttermilk and mix gently with a spoon or spatula until just combined; do not overmix.
  4. Turn the shaggy dough out onto a lightly floured surface, gently pat or roll to about 3/4-inch thickness, then fold it over itself 3-4 times to create layers.
  5. Using a 2-inch biscuit cutter, cut out biscuits, re-rolling scraps once if needed, and place them on a baking sheet.
  6. Bake for 12-15 minutes, or until golden brown on top and bottom. Serve warm.

Notes

For extra flaky biscuits, ensure all ingredients, especially butter and buttermilk, are very cold. Avoid overworking the dough to keep them tender.
