  • 4 cloves Garlic minced
  • 1 cup Heavy cream
  • 4 oz Cream cheese softened
  • 1/2 cup Chicken broth
  • 1/2 cup Parmesan cheese shredded
  • 2 tbsp Olive oil
  • 2 cups Spinach fresh
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Method
 

Preparation & Cooking
  1. Preheat oven to 375°F (190°C). Season the chicken with salt and pepper.
  2. Heat olive oil in a large skillet; brown chicken, then remove and set aside.
  3. Add sliced mushrooms to the skillet and cook until softened; stir in minced garlic.
  4. Reduce heat, then add heavy cream, cream cheese, and chicken broth, whisking until smooth.
  5. Stir in fresh spinach until wilted, then return the browned chicken to the skillet.
  6. Transfer the mixture to a 9x13 inch baking dish and sprinkle with shredded Parmesan.
  7. Bake for 20-25 minutes, or until bubbly and the cheese is golden brown.
  8. Let the casserole rest for a few minutes before serving.

Notes

For an extra layer of flavor, consider adding a sprinkle of fresh parsley or chives before serving.
