- Preheat oven to 375°F (190°C). Season the chicken with salt and pepper.
- Heat olive oil in a large skillet; brown chicken, then remove and set aside.
- Add sliced mushrooms to the skillet and cook until softened; stir in minced garlic.
- Reduce heat, then add heavy cream, cream cheese, and chicken broth, whisking until smooth.
- Stir in fresh spinach until wilted, then return the browned chicken to the skillet.
- Transfer the mixture to a 9x13 inch baking dish and sprinkle with shredded Parmesan.
- Bake for 20-25 minutes, or until bubbly and the cheese is golden brown.
- Let the casserole rest for a few minutes before serving.
