Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a saucepan, melt the butter over medium heat until it turns light brown.
- Remove from heat and stir in the brown sugar until dissolved.
- In a bowl, combine the gluten-free flour, salt, and baking soda.
- Gradually mix the dry ingredients into the butter mixture until well combined.
- Drop spoonfuls of dough onto the prepared baking sheet, spaced apart.
Baking
- Bake for 10-12 minutes or until the edges are golden.
- Let the cookies cool, then sandwich with a little chocolate in between.
Notes
Store in an airtight container at room temperature for about a week. Refrigerate or freeze for longer storage. Allow to come to room temperature before serving.
