Cookie Ingredients
  • 6 tablespoons unsalted butter Melted until light brown
  • 1 cup brown sugar Dissolved in melted butter
  • 1/2 cup all-purpose gluten-free flour Substitute with regular flour if not gluten-free
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 cup chocolate for sandwiching Dark chocolate adds a richer flavor

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a saucepan, melt the butter over medium heat until it turns light brown.
  3. Remove from heat and stir in the brown sugar until dissolved.
  4. In a bowl, combine the gluten-free flour, salt, and baking soda.
  5. Gradually mix the dry ingredients into the butter mixture until well combined.
  6. Drop spoonfuls of dough onto the prepared baking sheet, spaced apart.
Baking
  1. Bake for 10-12 minutes or until the edges are golden.
  2. Let the cookies cool, then sandwich with a little chocolate in between.

Notes

Store in an airtight container at room temperature for about a week. Refrigerate or freeze for longer storage. Allow to come to room temperature before serving.
