Ingredients
  

Dry Ingredients
  • 1.5 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
Wet Ingredients
  • 0.5 cups unsalted butter, softened Make sure butter is soft but not melted.
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest Add more zest for a stronger lemon flavor.
  • 1 teaspoon vanilla extract
Coating
  • 0.25 cup powdered sugar For coating the cookies.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the softened butter and granulated sugar until light and fluffy.
  4. Add the egg, lemon juice, lemon zest, and vanilla extract, mixing well.
  5. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  6. Chill the dough in the refrigerator for about 30 minutes.
Baking
  1. Scoop tablespoon-sized portions of dough, roll them into balls, and then coat each ball in powdered sugar.
  2. Place the balls on the prepared baking sheet, spacing them apart.
  3. Bake for 10-12 minutes or until the edges are set.
  4. Let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For best results, don’t skip chilling the dough to help the cookies retain their shape and enhance flavors. Store cookies in an airtight container at room temperature for up to a week, or freeze them for up to three months.
