Preparation
- Preheat your oven to 375°F (190°C).
- In a shallow dish, mix together the bread crumbs, half of the Parmesan cheese, Italian seasoning, salt, and black pepper.
- In another dish, beat the eggs with the milk until well combined.
- Place the flour in a third shallow dish.
- Dredge each chicken breast in the flour, then dip it in the egg mixture, and finally coat it with the breadcrumb mixture.
Cooking
- Heat the olive oil in a skillet over medium heat. Cook the chicken for 3-4 minutes on each side until golden brown.
- Transfer the cooked chicken to a baking dish.
- In a small bowl, mix the remaining Parmesan cheese with the mozzarella cheese and minced garlic. Spread this mixture over the chicken.
- Bake in the preheated oven for 20-25 minutes until the chicken is cooked through and the cheese is melted and bubbly.
Notes
For extra flavor, marinate the chicken breasts in Italian dressing for a few hours before starting. You can also customize the recipe with different cheeses or add fresh herbs. Leftovers can be stored in an airtight container in the refrigerator for 3 to 4 days, or frozen for up to 3 months.
