Ingredients
  

Chicken and Coating
  • 4 pieces chicken breasts, boneless skinless
  • 1 cup bread crumbs
  • 1 cup grated Parmesan cheese Divided into two portions
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a shallow dish, mix together the bread crumbs, half of the Parmesan cheese, Italian seasoning, salt, and black pepper.
  3. In another dish, beat the eggs with the milk until well combined.
  4. Place the flour in a third shallow dish.
  5. Dredge each chicken breast in the flour, then dip it in the egg mixture, and finally coat it with the breadcrumb mixture.
Cooking
  1. Heat the olive oil in a skillet over medium heat. Cook the chicken for 3-4 minutes on each side until golden brown.
  2. Transfer the cooked chicken to a baking dish.
  3. In a small bowl, mix the remaining Parmesan cheese with the mozzarella cheese and minced garlic. Spread this mixture over the chicken.
  4. Bake in the preheated oven for 20-25 minutes until the chicken is cooked through and the cheese is melted and bubbly.

Notes

For extra flavor, marinate the chicken breasts in Italian dressing for a few hours before starting. You can also customize the recipe with different cheeses or add fresh herbs. Leftovers can be stored in an airtight container in the refrigerator for 3 to 4 days, or frozen for up to 3 months.
