Prepare Chicken
- Preheat your oven to 400°F (200°C) and lightly grease a baking dish. Pound chicken breasts to an even thickness of about 1/2 inch.
Breading Stations
- Prepare three shallow dishes: one with flour, salt, and pepper; one with beaten eggs; and one with Panko, Parmesan, garlic powder, onion powder, and paprika, mixed well.
Coat Chicken
- Dredge each chicken breast in the seasoned flour, then dip in the egg wash, and finally coat thoroughly with the Panko-Parmesan mixture, pressing to adhere.
Bake Chicken
- Place the coated chicken in the prepared baking dish, drizzle with olive oil, and bake for 20-25 minutes, or until cooked through and golden brown.
Finish Dish
- Remove chicken from the oven, spoon marinara sauce over each piece, and sprinkle with mozzarella cheese. Return to the oven and bake for another 5-7 minutes until the cheese is melted and bubbly.
- Garnish with fresh chopped parsley before serving.
