  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Method
 

Preparation
  1. Set up three shallow dishes: one with flour, one with whisked eggs, and a third with a mixture of Panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and black pepper.
  2. Dredge each chicken breast in flour, shaking off excess, then dip into the egg, and finally coat thoroughly with the breadcrumb-Parmesan mixture, pressing to adhere.
Cooking
  1. Heat olive oil in a large skillet over medium-high heat until shimmering. Carefully place the breaded chicken breasts in the skillet.
  2. Cook for 4-5 minutes per side, or until golden brown and cooked through to an internal temperature of 165°F (74°C). If desired, finish in a preheated 400°F (200°C) oven for 5-7 minutes for extra crispiness.
Serving
  1. Serve the Parmesan chicken immediately. Optionally, top with warm marinara sauce and garnish with fresh chopped parsley.

Notes

For extra flavor, marinate the chicken in buttermilk for at least 30 minutes before breading.
