  • 2 cups cooked chicken, chopped Use grilled or roasted chicken for a smoky flavor.
  • 2 cups mixed greens (spinach, romaine, etc.)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup bell peppers, chopped
  • 1/4 cup sugar-free honey mustard dressing Feel free to substitute with any low-carb dressing.
  • Salt and pepper to taste

Preparation
  1. In a large bowl, combine the chopped chicken, mixed greens, cherry tomatoes, cucumber, red onion, and bell peppers.
  2. Drizzle with the sugar-free honey mustard dressing and toss to combine.
  3. Season with salt and pepper to taste.
  4. Serve immediately.

Notes

You can serve this salad on a plate or in a bowl. It makes a great main dish or a side salad. To add extra flavor, consider serving it with whole grain crackers or on a low-carb wrap. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Store the dressing separately if possible to keep the salad crisp.
