Blondies
- Preheat oven to 350°F (175°C) and prepare an 8x8 inch baking pan by lining it with parchment paper.
- In a large bowl, whisk together melted butter and both sugars until smooth.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking powder, and salt, then gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the diced apples, ensuring they are evenly distributed throughout the batter.
- Spread the batter evenly into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- Let the blondies cool completely in the pan on a wire rack.
Maple Glaze
- In a small bowl, whisk together powdered sugar, maple syrup, milk, and vanilla extract until smooth and pourable.
- Once the blondies are completely cool, pour the glaze over them and spread evenly.
- Allow the glaze to set for at least 15-20 minutes before cutting the blondies into squares and serving.
Notes
For best results, ensure apples are finely diced to distribute evenly. The blondies are delicious served warm with a scoop of vanilla ice cream. Store leftover blondies in an airtight container at room temperature for up to 3 days.
