  • 1/2 cup Unsalted butter 113g, melted
  • 1 cup Light brown sugar 200g, packed
  • 1/4 cup Granulated sugar 50g
  • 1 Large egg
  • 1 tsp Vanilla extract
  • 1 1/4 cups All-purpose flour 150g
  • 1/2 tsp Baking powder
  • 1/4 tsp Salt
  • 1 Apple medium, peeled, cored, and finely diced (e.g., Gala or Fuji)
Maple Glaze
  • 1 cup Powdered sugar 120g
  • 2-3 tbsp Maple syrup
  • 1-2 tbsp Milk (or cream)
  • 1/4 tsp Vanilla extract

Method
 

Blondies
  1. Preheat oven to 350°F (175°C) and prepare an 8x8 inch baking pan by lining it with parchment paper.
  2. In a large bowl, whisk together melted butter and both sugars until smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt, then gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Fold in the diced apples, ensuring they are evenly distributed throughout the batter.
  6. Spread the batter evenly into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  7. Let the blondies cool completely in the pan on a wire rack.
Maple Glaze
  1. In a small bowl, whisk together powdered sugar, maple syrup, milk, and vanilla extract until smooth and pourable.
  2. Once the blondies are completely cool, pour the glaze over them and spread evenly.
  3. Allow the glaze to set for at least 15-20 minutes before cutting the blondies into squares and serving.

Notes

For best results, ensure apples are finely diced to distribute evenly. The blondies are delicious served warm with a scoop of vanilla ice cream. Store leftover blondies in an airtight container at room temperature for up to 3 days.
