Ingredients
  

Sweet Potatoes

  • 1/4 cup pecans Chopped and toasted, adds a delightful crunch.
Flavor Enhancers
  • 2 tbsp unsalted butter Ensures the sweet potato mixture is rich and flavorful.
  • 1 tbsp maple syrup Enhances sweetness; honey can be used as an alternative.
  • Salt to taste Salt

Cranberry Glaze
  • 1/2 cup cranberry sauce Whole berry or smooth, brings tartness to the dish.
  • 1 tbsp orange juice Adds bright citrus notes to the glaze.
  • 1/2 tsp maple syrup For glaze, adds sweetness to the cranberry mix.

Method
 

Preparation
  1. Set your oven to 400°F (200°C) to get it warm and ready for delicious roasting.
  2. Prick your sweet potatoes several times with a fork, then place them on a baking sheet.
  3. Bake the sweet potatoes for 45 to 55 minutes, until they’re tender and easily pierced with a fork.
Cranberry Sauce
  1. In a small saucepan, combine cranberry sauce, orange juice, and a splash of maple syrup.
  2. Heat on low for 5 minutes until it thickens just slightly.
Assembly
  1. Once cool, slice the sweet potatoes open lengthwise, then gently mash the insides with a fork.
  2. Stir in unsalted butter, maple syrup, salt, and black pepper.
  3. Fill each sweet potato with slices of creamy Brie cheese and sprinkles of toasted pecans.
  4. Top with the tangy cranberry glaze and return the stuffed potatoes to the oven for 5 to 7 minutes until the Brie is beautifully melted.

Notes

Make sure to roast the sweet potatoes well; this enhances their sweetness and creaminess. Toast the pecans lightly to bring out their flavor and crunch.
