  • 2 pieces boneless, skinless chicken breasts
  • 2 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil, for garnish

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sliced zucchini, cherry tomatoes, olive oil, garlic, oregano, salt, and pepper.
  3. Place the chicken breasts in a baking dish and pour the vegetable mixture over them.
  4. Sprinkle feta cheese on top.
Cooking
  1. Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  2. Garnish with fresh basil before serving.

Notes

Pair with a side salad or some crusty bread. For added flavor, drizzle with balsamic glaze or include varied vegetables like bell peppers or onions.
