Ingredients
  

Salad Base
  • 1 cup couscous
  • 1 1/4 cups boiling water
  • 1 cup cherry tomatoes, halved
  • 1 piece cucumber, diced
  • 1/2 piece red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine couscous and boiling water. Cover and let stand for 5 minutes until the water is absorbed. Fluff couscous with a fork.
  2. Add cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley to the couscous.
Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  2. Pour the dressing over the salad and toss gently to combine.
Serving
  1. Serve immediately or chill in the fridge for 30 minutes before serving.

Notes

To store this salad, place it in an airtight container and refrigerate. It can last up to 3 days in the fridge. For added flavor, let the salad sit for about 30 minutes after mixing the dressing. To prevent the couscous from sticking, fluff it well with a fork after it absorbs the water.
