  • 0.5 cup Red onion finely diced
  • 1 cup Cherry tomatoes halved
  • 0.25 cup Fresh parsley chopped
  • 2 tbsp Fresh mint chopped
Dressing
  • 0.25 cup Olive oil
  • 3 tbsp Lemon juice fresh
  • 2 tbsp Za'atar
  • 1 clove Garlic minced
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Method
 

Preparation
  1. Rinse and drain all canned beans thoroughly, then transfer them to a large mixing bowl. Add the finely diced red onion, halved cherry tomatoes, chopped fresh parsley, and chopped fresh mint to the bowl with the beans.
  2. In a small bowl, whisk together the olive oil, fresh lemon juice, za'atar, minced garlic, salt, and black pepper until well combined.
  3. Pour the prepared dressing over the bean and vegetable mixture in the large bowl. Gently toss everything together until all ingredients are evenly coated. For optimal flavor, cover the bowl and refrigerate for at least 30 minutes before serving.

Notes

For best flavor, allow the salad to marinate in the refrigerator for at least 30 minutes before serving. It can be made a day ahead.
