Meatloaf
  • 1.5 lbs Ground chicken
  • 1/2 cup Plain breadcrumbs
  • 1/2 cup Grated Parmesan cheese
  • 1 Large egg
  • 1/4 cup Milk
  • 3 cloves Garlic minced
  • 1/4 cup Yellow onion finely chopped
  • 2 tbsp Fresh parsley chopped
  • 1 tsp Salt
  • 1/2 tsp Black pepper
Glaze
  • 1/4 cup Ketchup
  • 1 tbsp Brown sugar
  • 1 tsp Worcestershire sauce

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and lightly grease a loaf pan or baking dish.
  2. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, egg, milk, minced garlic, chopped onion, parsley, salt, and pepper until just mixed.
Baking
  1. Gently form the mixture into an oblong loaf shape and place it into the prepared pan.
  2. In a small bowl, whisk together the ketchup, brown sugar, and Worcestershire sauce to create the glaze. Spread the glaze evenly over the top of the meatloaf.
  3. Bake for 45-55 minutes, or until the internal temperature reaches 165°F (74°C).
Serving
  1. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

For extra moisture and flavor, consider adding finely diced bell peppers or shredded zucchini to the meatloaf mixture.
