Ingredients
  

Wet Ingredients
  • 1 cup unsalted butter, softened Make sure your butter is softened, not melted.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon zest For extra lemon flavor, you can add a bit more.
  • 2 tablespoons lemon juice
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Main Ingredients
  • 1 cup blueberries, fresh or frozen If using frozen, do not thaw them before adding.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream the softened butter, granulated sugar, and brown sugar together until fluffy.
  3. Beat in the eggs one at a time. Then stir in the vanilla extract, lemon zest, and lemon juice.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients until just combined.
  6. Gently fold in the blueberries.
Baking
  1. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  2. Bake for 10-12 minutes or until the edges are golden.
  3. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Serve these cookies warm or at room temperature. They are also delicious with vanilla ice cream or a glass of milk. Store in an airtight container for up to a week; freeze for up to three months.
