Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream the softened butter, granulated sugar, and brown sugar together until fluffy.
- Beat in the eggs one at a time. Then stir in the vanilla extract, lemon zest, and lemon juice.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients until just combined.
- Gently fold in the blueberries.
Baking
- Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Serve these cookies warm or at room temperature. They are also delicious with vanilla ice cream or a glass of milk. Store in an airtight container for up to a week; freeze for up to three months.
