A delicious, hearty soup that is perfect for busy days, makes use of leftover ingredients, and packs a lot of flavor with minimal effort.

Ingredients
  

Base ingredients
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
Liquid base
  • 6 cups chicken or vegetable broth
Vegetables and Beans
  • 1 can (14.5 ounces) diced tomatoes, with juice
  • 1 cup frozen corn
  • 1 cup green beans, chopped
  • 1 can (15 ounces) kidney beans, drained and rinsed
Spices
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • to taste Salt and pepper
Garnish
  • to taste Fresh parsley or cilantro for garnish

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion, carrots, and celery. Cook until vegetables are tender, about 5-7 minutes.
  3. Stir in garlic and cook for another minute.
Cooking
  1. Pour in the broth and bring to a boil.
  2. Add diced tomatoes, corn, green beans, and kidney beans.
  3. Mix in oregano, cumin, salt, and pepper.
  4. Reduce heat and simmer for 20-30 minutes, stirring occasionally.
  5. Taste and adjust seasoning if needed.
Serving
  1. Serve hot, garnished with fresh parsley or cilantro if desired.

Notes

Feel free to add your favorite vegetables or protein for variations. The soup can also be made ahead of time to deepen the flavors.
