Preparation
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix the dry ingredients: whole wheat flour, oats, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together the wet ingredients: applesauce, brown sugar, eggs, and oil.
- Stir the wet mixture into the dry ingredients until just combined.
- Fold in the grated carrot, grated apple, flax seeds, and raisins.
- Spoon the batter into the muffin tins, filling each about 3/4 full.
Baking
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack.
Notes
Morning Glory Muffins are best served warm or at room temperature. They can be enjoyed plain or with a spread of butter or cream cheese. Store them in an airtight container for up to three days, or freeze for longer storage.
