Ingredients
  

Dry Ingredients
  • 1 cup whole wheat flour
  • 1/2 cup oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
Wet Ingredients
  • 1/2 cup applesauce
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/4 cup vegetable oil or melted coconut oil
Additional Ingredients
  • 1/4 cup flax seeds
  • 1 large carrot, grated
  • 1 large apple, grated
  • 1/2 cup raisins

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the dry ingredients: whole wheat flour, oats, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the wet ingredients: applesauce, brown sugar, eggs, and oil.
  4. Stir the wet mixture into the dry ingredients until just combined.
  5. Fold in the grated carrot, grated apple, flax seeds, and raisins.
  6. Spoon the batter into the muffin tins, filling each about 3/4 full.
Baking
  1. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow to cool in the pan for a few minutes before transferring to a wire rack.

Notes

Morning Glory Muffins are best served warm or at room temperature. They can be enjoyed plain or with a spread of butter or cream cheese. Store them in an airtight container for up to three days, or freeze for longer storage.
