My Favorite Soft & Chewy Peanut Butter Cookies

These classic soft and chewy peanut butter cookies are incredibly easy to make and guaranteed to be a hit with everyone. Featuring a perfect balance of sweet and salty, they are an irresistible treat for any occasion.

Ingredients
  

Cookie Dough
  • 1/2 cup Unsalted butter softened
  • 1 cup Creamy peanut butter
  • 1/2 cup Granulated sugar
  • 1/2 cup Light brown sugar packed
  • 1 Large egg
  • 1 tsp Vanilla extract
  • 1.5 cups All-purpose flour
  • 1 tsp Baking soda
  • 1/2 tsp Salt
For rolling
  • 1/4 cup Granulated sugar

  • Electric mixer (stand or hand)
  • Rubber spatula

  • Parchment paper
  • Wire rack
  • Small shallow bowl
  • Fork

Method
 

Prepare the Dough
  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined, scraping down the sides of the bowl as needed.
  4. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined and a soft dough forms.
Bake the Cookies
  1. Place the remaining 1/4 cup granulated sugar in a small shallow bowl.
  2. Scoop dough by rounded tablespoons, roll each into a ball, and then roll in the granulated sugar to coat.
  3. Place cookies 2 inches apart on prepared baking sheets and flatten each with a fork in a crisscross pattern.
  4. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are just set; do not overbake.
  5. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra chewiness, store cookies in an airtight container with a slice of bread. If preferred, you can use crunchy peanut butter for added texture.
