Preparation
  1. In a mixing bowl, combine chia seeds, coconut milk, honey (or maple syrup), lime zest, lime juice, vanilla extract, and a pinch of salt. Stir well to prevent clumping.
  2. Let the mixture sit for about 10-15 minutes until it thickens, stirring occasionally.
  3. Once thickened, fold in the shredded coconut.
  4. Pour the mixture into a lined baking dish and spread evenly.
  5. Refrigerate for at least 2-3 hours or until firm.

Notes

Store any leftover bars in an airtight container in the refrigerator. They can last up to a week. Stir well to prevent chia seeds from clumping, and feel free to customize with fruits or nuts.
