Preparation
- Start by softening the butter to around 65-68ºF (18-20ºC).
- Preheat the oven to 350°F (175°C) and prepare baking sheets with parchment paper.
- In a large bowl or stand mixer, combine almond flour, granulated sugar, all-purpose flour, salt, and cinnamon.
- Add softened butter and mix on low speed until the mixture resembles sandy breadcrumbs.
- Add the cold egg and vanilla, mixing until a dough forms.
- Turn the dough onto a floured surface and roll out to a thickness of ¼ inch (6 mm).
Baking and Assembling
- Use cookie cutters to cut shapes and lift them to lined baking sheets.
- Bake one tray at a time for 10-12 minutes or until tops look matte and edges golden brown.
- Cool the cookies for 5-10 minutes before dusting with powdered sugar.
- Spread jam on half the cookies and sandwich with others.
Notes
Store leftover cookies in an airtight container for up to a week. For longer storage, freeze the cookies separated by parchment paper.
