Ingredients
  

For the Marinade
  • 1 cup Nuoc mam (fish sauce)
  • 3 cloves Garlic, minced
  • 2 tablespoons Lime juice
  • 1 tablespoon Sugar
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Chili flakes (optional) Adjust according to spice preference.

  • 2 tablespoons Vegetable oil For brushing.

Method
 

Marinating the Wings
  1. In a bowl, combine nuoc mam, minced garlic, lime juice, sugar, black pepper, and chili flakes to make a marinade.
  2. Add chicken wings to the marinade and refrigerate for at least 1 hour, preferably overnight.
Cooking
  1. Preheat your oven to 425°F (220°C) or prepare a grill.
  2. Remove the marinated chicken wings from the refrigerator and let them sit at room temperature for 10 minutes.
  3. Arrange the wings on a baking sheet or grill and brush with vegetable oil.
  4. Bake or grill the wings for 20-25 minutes, flipping halfway through, until they are cooked through and crispy.
Serving
  1. Serve hot with lime wedges on the side.

Notes

For the best flavor, marinate the chicken wings overnight. To achieve extra crispiness, ensure that the wings are not overcrowded on the baking sheet or grill. Feel free to adjust the amount of chili flakes depending on how spicy you like your wings. To store leftover wings, let them cool completely and place them in an airtight container. Store in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through.
