- In a mixing bowl, combine the rolled oats, peanut butter, honey, chocolate chips, vanilla extract, and flaxseed if using.
- Mix well until everything is combined.
- Refrigerate the mixture for about 30 minutes to make it easier to handle.
- Once chilled, scoop out small portions and roll them into balls.
- Store the energy balls in an airtight container in the refrigerator for up to a week.
Notes
To make rolling easier, wet your hands slightly before forming the balls. Feel free to adjust the sweetness by adding more or less honey. You can also customize these energy balls by adding shredded coconut, chopped nuts, or protein powder for an extra boost.
