Preparation
- Preheat your oven to 350°F (175°C). Line an 8×8 pan with parchment paper and grease the top with non-stick cooking spray for easy removal.
- In a medium bowl, mix together the dry ingredients: flour, oats, pumpkin pie spice, salt, and baking soda. Stir well to combine.
- In a large bowl, beat the two eggs. Add the pumpkin puree, applesauce, brown sugar, and vanilla extract. Mix these wet ingredients until they are well combined.
- Pour the dry ingredients into the wet ingredients and stir to blend. Make sure to scrape the bottom of the bowl to mix everything together thoroughly.
- Fold half of the pepitas and pecans into the batter. Pour the mixture into your prepared 8×8 pan, spreading it evenly.
- Sprinkle the remaining pepitas and pecans over the top of the batter.
- Bake in the preheated oven for 25-30 minutes, until the bars are cooked through in the center.
- Allow the bars to cool lightly before slicing them into squares.
Notes
These bars can be enjoyed warm or at room temperature. They are perfect on their own or served with whipped cream or ice cream. Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
