  • 2 cups shredded ropa vieja (shredded beef stew) Use leftover beef for the best flavor.
  • 4 pieces arepas (cornmeal cakes) Prepare according to package instructions.
  • 1 cup shredded cheese Optional topping.
  • 1 pieces avocado (sliced) For fresh toppings.
  • 1/2 cup salsa or pico de gallo For added flavor.
  • to taste Salt and pepper For seasoning.

Method
 

Preparation
  1. Prepare the arepas according to package instructions or your favorite recipe.
  2. Once the arepas are cooked, slice them open to create a pocket.
  3. Fill each arepa with shredded ropa vieja.
  4. Top with cheese (if using), avocado slices, and salsa or pico de gallo.
  5. Season with salt and pepper to taste and serve warm.

Notes

Store any leftovers in an airtight container in the refrigerator for 2-3 days. Reheat in a skillet or microwave. Make sure arepas are golden brown for best flavor.
