  • 1/2 tsp Salt
  • 1/2 cup Unsalted butter softened
  • 1 cup Brown sugar packed
  • 2 Large eggs
  • 1 tsp Vanilla extract

  • 1/2 cup Chopped pecans
  • 1/2 cup Rolled oats

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and prepare baking sheets by lining them with parchment paper. In a medium bowl, combine the flour, baking soda, and salt using a whisk.
  2. In a separate large bowl, cream together the softened butter and brown sugar until the mixture is light and fluffy. Incorporate the eggs one at a time, then stir in the vanilla extract.
  3. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Gently fold in the candied mixed fruit, chopped pecans, and rolled oats.
Baking
  1. Drop rounded tablespoons of the cookie dough onto the prepared baking sheets, ensuring they are spaced approximately 2 inches apart. Bake for 10-12 minutes, or until the edges of the cookies turn golden brown.
  2. Allow the baked cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

For the best flavor and texture, ensure your butter is softened to room temperature. You can substitute pecans with walnuts or almonds if preferred.
