  • 12 ounces Pasta (any short pasta like penne or rotini)
  • 4 cloves Garlic, minced
  • 4 cups Chicken or vegetable broth
  • 1 cup Heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped for garnish

Method
 

Preparation
  1. Heat olive oil in a large pot over medium heat. Sauté minced garlic for about one minute until fragrant, being careful not to burn it.
  2. Add the uncooked pasta, chicken or vegetable broth, heavy cream, salt, and black pepper to the pot, then stir everything together well.
  3. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 12-15 minutes. Stir occasionally until pasta is al dente and most liquid is absorbed.
  4. Remove from heat and stir in the grated Parmesan cheese until melted and the sauce is creamy; adjust seasoning if needed.
  5. Serve immediately, garnished with fresh chopped parsley.

Notes

For an extra layer of flavor, add a handful of fresh spinach or sun-dried tomatoes during the last few minutes of cooking.
