- In a large pot, brown the ground beef or sausage over medium heat. Add the diced onion and garlic, cooking until the onion is translucent.

- Add the broken lasagna noodles and cook for about 10-12 minutes until they are tender.
- Stir in the chopped spinach or kale, and cook for another 2-3 minutes.
- Season with salt and pepper to taste.
- Serve hot, topped with a dollop of ricotta and a sprinkle of mozzarella cheese. Garnish with fresh basil if desired.
