Ingredients
  

Meat and Aromatics
  • 1 lb ground beef or Italian sausage Can be substituted with turkey or plant-based option
  • 1 medium onion, diced
  • 2 cloves garlic, minced
Liquids and Seasoning
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth Homemade broth enhances flavor
  • 2 tsp Italian seasoning
Pasta and Veggies
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups spinach or kale, chopped Other vegetables like zucchini and bell peppers can be added
Dairy
  • 1 cup ricotta cheese Dollop on top when serving
  • 1 cup shredded mozzarella cheese Sprinkle on top when serving
Seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Method
 

Cooking
  1. In a large pot, brown the ground beef or sausage over medium heat. Add the diced onion and garlic, cooking until the onion is translucent.
  2. Stir in the crushed tomatoes, broth, and Italian seasoning. Bring to a simmer.
  3. Add the broken lasagna noodles and cook for about 10-12 minutes until they are tender.
  4. Stir in the chopped spinach or kale, and cook for another 2-3 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, topped with a dollop of ricotta and a sprinkle of mozzarella cheese. Garnish with fresh basil if desired.

Notes

This soup pairs well with crusty bread for dipping. For a lighter version, consider using whole wheat pasta.
