For the Cookie Dough
  • 1 cup ricotta cheese
  • 1/2 cup unsalted butter, softened Be sure to use softened butter for easier mixing.
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips Experiment with different types like dark or white chocolate.
  • 1 zest of orange For extra flavor, consider adding more zest.
  • 1 juice of orange

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the ricotta cheese and softened butter.
  3. Add the sugar, egg, vanilla extract, orange zest, and orange juice, mixing until well combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 12-15 minutes or until the edges are lightly golden.
  2. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store the cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze in a freezer-safe bag for up to 3 months. Thaw at room temperature before enjoying.
