  • 4 pieces Chicken thighs Boneless, skinless for best results.
  • 1 loaf Focaccia bread Freshly baked or store-bought.
  • 1/2 cup Garlic sauce For spreading on the bread.
  • 1/4 cup Tahini Adds creaminess.
  • 1 cup Mozzarella cheese Shredded or sliced.
  • 1 cup Pickled vegetables For crunch and tang.
  • 2 cups Fresh arugula Adds freshness.
  • 1 tbsp Lemon juice For squeezing on top.
  • 1 tbsp Spices Cumin, paprika, garlic powder, onion powder, salt, and pepper as preferred.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken thighs with spices and bake in the oven until cooked through and juicy, about 25 minutes.
  3. While the chicken is baking, toast the focaccia bread in the oven.
Assembly
  1. Spread garlic sauce and tahini on the inside of the toasted focaccia.
  2. Layer the baked chicken, melted mozzarella, pickled vegetables, and fresh arugula on the bread.
  3. Squeeze fresh lemon juice over the top before closing the sandwich.
Serving
  1. Serve the sandwich hot and fresh. It's great for lunch or dinner.

Notes

For added flavor, use fresh herbs or spices. To make the sandwich spicier, add hot sauce or jalapeños. Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in the oven for the best taste.
