  • 1 can Whole Kernel Corn
  • 1 can Cream-Style Corn
  • 1 cup Sour Cream
  • 1/2 cup Unsalted Butter Melted
  • 1 package Corn Muffin Mix
  • 2 cups Shredded Medium Cheddar Cheese
  • 1/2 cup Additional Cheese Optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the two cans of corn, sour cream, and melted butter.
  3. Stir in the corn muffin mix until well combined.
  4. Fold in 2 cups of shredded cheese gently.
  5. Pour the mixture into a greased casserole dish.
  6. If desired, sprinkle some additional cheese on top for extra flavor.
  7. Bake in the preheated oven for about 45 minutes, or until golden brown and set.
  8. Let it cool for a few minutes before serving.

Notes

For a spicier kick, add some chopped jalapeños or diced green chilies to the mixture. Experiment with different types of cheese, like pepper jack or Monterey Jack, for different flavors. Store leftovers in an airtight container in the refrigerator for 3 to 5 days or freeze for longer storage.
