Making the Cookies
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in chocolate chips and caramel pieces.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden and the centers are still soft.
- Let cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
For best results, do not overbake these cookies to keep them soft and chewy. Store in an airtight container at room temperature for up to 3-4 days.
