  • 1 cup peanut butter Use smooth peanut butter for a consistent texture.
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1/4 cup flour Can replace with gluten-free flour for gluten-free option.
Optional Mix-ins
  • chocolate chips or chopped peanuts Fold in if desired.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the peanut butter, sugar, brown sugar, egg, and vanilla until well combined.
  3. Add the baking soda, salt, and flour, mixing until just combined.
  4. If desired, fold in chocolate chips or chopped peanuts.
Baking
  1. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  2. Flatten each ball slightly with a fork, creating a crisscross pattern.
  3. Bake for 10-12 minutes, or until the edges are set.
  4. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for about one week or freeze for up to three months. To make cookies extra soft, avoid overbaking.
