Method
 

  1. Preheat the oven: Set oven to 350°F (175°C) and lightly grease or line a baking sheet with parchment paper.
  2. Mix wet ingredients: In a large bowl, combine peanut butter, egg, and maple syrup. Stir until the mixture becomes thick and smooth.
  3. Add oats: Gradually stir in the oats until you get a thick, sticky cookie dough consistency.
  4. Shape cookies: Scoop heaping tablespoons of dough onto the prepared baking sheet. Shape into rounds and gently press down to flatten.
  5. Bake: Bake for 10–12 minutes, or until the cookies are cooked through and lightly golden. Let cool before serving.
