Method
- Preheat the oven: Set oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Make the cookie dough: In a large bowl, mix together peanut butter, sugar, egg, softened butter, and vanilla extract until smooth and creamy.
- Add dry ingredients: In another bowl, whisk together flour, baking soda, and salt. Gradually add this mixture to the peanut butter mixture, mixing until combined.
- Shape cookies: Roll the dough into small balls and place them on the prepared baking sheet. Flatten each ball slightly with a fork to create a crisscross pattern.
- Bake: Bake for 10–12 minutes, or until the edges are golden brown. Remove from oven and let cool completely on a wire rack.
- Prepare the filling: In a separate bowl, beat together powdered sugar, softened butter, and vanilla extract until light and fluffy.
- Assemble the cookies: Spread a layer of filling on the flat side of one cookie and top with another cookie to make a sandwich.

Tips:
• Soften butter before mixing for a smooth dough and filling.
• Use crunchy peanut butter for added texture.
• Don’t overbake to keep cookies soft and chewy. Variations: Add chocolate chips to the dough for a chocolate-peanut butter twist, or sprinkle sea salt over the filling for a sweet-salty balance.
