Method
 

  1. Preheat the oven: Set oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Make the cookie dough: In a large bowl, mix together peanut butter, sugar, egg, softened butter, and vanilla extract until smooth and creamy.
  3. Add dry ingredients: In another bowl, whisk together flour, baking soda, and salt. Gradually add this mixture to the peanut butter mixture, mixing until combined.
  4. Shape cookies: Roll the dough into small balls and place them on the prepared baking sheet. Flatten each ball slightly with a fork to create a crisscross pattern.
  5. Bake: Bake for 10–12 minutes, or until the edges are golden brown. Remove from oven and let cool completely on a wire rack.
  6. Prepare the filling: In a separate bowl, beat together powdered sugar, softened butter, and vanilla extract until light and fluffy.
  7. Assemble the cookies: Spread a layer of filling on the flat side of one cookie and top with another cookie to make a sandwich.
