  • 1.5 lbs Beef sirloin or flank steak sliced into thin strips
  • 1 Green bell pepper large, sliced
  • 1 Red bell pepper large, sliced
  • 1 Yellow onion medium, sliced
  • 2 Garlic cloves, minced
  • 1 cup Beef broth
  • 0.5 cup Soy sauce
  • 1 tbsp Brown sugar
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Cornstarch
  • 2 tbsp Water for slurry
  • 1 tbsp Olive oil optional for searing

Method
 

Instructions
  1. Slice the beef into thin strips, and cut bell peppers and onion into similar-sized pieces; mince the garlic cloves.
  2. In a bowl, whisk together beef broth, soy sauce, brown sugar, salt, and black pepper to create the sauce.
  3. Place the sliced beef, bell peppers, onion, and minced garlic into the crock pot, then pour the prepared sauce over everything.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.
  5. In a small bowl, mix cornstarch with an equal amount of cold water to form a slurry, then stir it into the crock pot during the last 30 minutes of cooking to thicken the sauce.
  6. Serve the pepper steak hot over steamed rice or noodles.

Notes

For a richer flavor, sear the beef strips in olive oil in a skillet before adding them to the crock pot. Adjust salt and pepper to taste before serving, and garnish with fresh parsley if desired.
