- Slice the beef into thin strips, and cut bell peppers and onion into similar-sized pieces; mince the garlic cloves.
- In a bowl, whisk together beef broth, soy sauce, brown sugar, salt, and black pepper to create the sauce.
- Place the sliced beef, bell peppers, onion, and minced garlic into the crock pot, then pour the prepared sauce over everything.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.
- In a small bowl, mix cornstarch with an equal amount of cold water to form a slurry, then stir it into the crock pot during the last 30 minutes of cooking to thicken the sauce.
- Serve the pepper steak hot over steamed rice or noodles.
Notes
For a richer flavor, sear the beef strips in olive oil in a skillet before adding them to the crock pot. Adjust salt and pepper to taste before serving, and garnish with fresh parsley if desired.
