  • 4 cups Chicken Broth
  • 2 cups Mixed Vegetables carrots, celery, peas
  • 1 cup Cooked Chicken shredded
  • 1 can Diced Tomatoes 14.5 oz
Seasoning
  • 1 tbsp Olive Oil
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 2 tbsp Fresh Parsley chopped, for garnish

Method
 

Prepare Aromatics
  1. Heat oil in a pot, then sauté onion until soft and add garlic for one minute until fragrant.
Combine Main Ingredients
  1. Add chicken broth, mixed vegetables, cooked chicken, and diced tomatoes to the pot, then bring the soup to a simmer.
Simmer and Season
