- Heat olive oil in a large skillet over medium heat.
- Add diced onion and garlic, sauté until translucent.
- Add diced chicken and cook until browned.
- Stir in bell peppers and pineapple chunks, cooking for a few minutes.
- Add rice and stir well.
- Pour in chicken broth and soy sauce.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes or until rice is cooked.
- Season with salt and pepper.
- Serve hot, garnished with green onions.
Notes
Store leftovers in an airtight container for up to 3 days. Reheat on medium heat in a skillet or microwave.
