Pretzel Bites with Cheese Dip

Ingredients
  

Pretzel Bites
  • 1 1/2 cups Warm water
  • 1 packet Active dry yeast (2 1/4 teaspoons)
  • 1 teaspoon Granulated sugar
  • 4 1/2 cups All-purpose flour
  • 1 teaspoon Salt
  • 1/2 cup Baking soda (for boiling water)
  • 1 Large egg (for egg wash)
  • Coarse sea salt for topping
Cheese Dip
  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 1 1/2 cups Milk
  • 2 cups Shredded cheddar cheese
  • 2 oz Cream cheese
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Method
 

Pretzel Bites
  1. In a bowl, combine warm water, yeast, and sugar; let stand for 5-10 minutes until foamy.
  2. Stir in flour and salt, then knead the mixture on a floured surface for 5-8 minutes until a smooth, elastic dough forms.
  3. Place the dough in a greased bowl, cover it, and let it rise in a warm place for about one hour, or until doubled in size.
  4. Bring a large pot of water and baking soda to a rolling boil.
  5. Roll pieces of dough into 1-inch thick ropes, cut them into 1-inch bites, and boil for 20-30 seconds before transferring to a parchment-lined baking sheet.
  6. Brush the boiled pretzel bites with egg wash, sprinkle with coarse sea salt, and bake at 400°F (200°C) for 12-15 minutes until golden brown.
Cheese Dip
  1. Melt butter in a saucepan over medium heat, then whisk in flour and cook for 1 minute.
  2. Gradually whisk in milk until the mixture thickens.
  3. Stir in shredded cheddar cheese, cream cheese, Dijon mustard, salt, and black pepper until the dip is smooth and all the cheese is melted.

Notes

For best results, serve the pretzel bites warm. You can adjust the amount of salt on the pretzels to your liking. Feel free to experiment with different cheeses in the dip for varied flavors.
