Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared baking dish.
- In another bowl, whisk together the pumpkin puree, sweetened condensed milk, eggs, vanilla extract, cinnamon, nutmeg, and ginger until well combined.
- Pour the pumpkin mixture over the crust in the baking dish.
- Sprinkle chocolate chips and nuts (if using) on top.
Baking
- Bake for 25-30 minutes or until the center is set.
- Allow to cool before cutting into bars. Serve and enjoy!
Notes
Store any leftover bars in an airtight container at room temperature for up to three days, refrigerate for up to a week, or freeze for up to three months. Wrap each bar individually before freezing.
