  • 1 large egg Beaten

Method
 

For the Pumpkin Muffins
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine all dry ingredients.
  3. In another bowl, whisk together the pumpkin puree, sugar, egg, and milk.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. Spoon the batter into the muffin tin and bake for 20-25 minutes until a toothpick comes out clean.
For the Pumpkin Chocolate Chip Bread
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the pumpkin puree, melted butter, sugar, and beaten egg.
  3. Add in the flour, baking soda, baking powder, cinnamon, salt, and chocolate chips; mix until just combined.
  4. Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
For the Pumpkin Spice Cake
  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. In a bowl, combine the pumpkin puree, sugar, eggs, and oil until smooth.
  3. In another bowl, whisk the flour, baking powder, baking soda, cinnamon, and salt.
  4. Mix the dry ingredients into the wet ingredients until just combined.
  5. Pour the batter into the prepared cake pan and bake for 30-35 minutes.
