Crust
  • 1 1/2 cups All-purpose flour

  • 3-4 tablespoons Ice water
Pumpkin Spice Filling
  • 1 cup Canned pumpkin puree
  • 4 oz Cream cheese softened
  • 1/2 cup Granulated sugar
  • 1 Large egg
  • 1 teaspoon Pumpkin pie spice
  • 1/2 teaspoon Vanilla extract
  • Salt A pinch
Caramel Topping
  • 1/2 cup Granulated sugar
  • 2 tablespoons Water
  • 1/4 cup Heavy cream warm
  • 2 tablespoons Unsalted butter
  • 1/2 teaspoon Vanilla extract
  • 1/4 teaspoon Salt

Method
 

Prepare the Crust
  1. Combine flour, sugar, and salt in a bowl; cut in cold butter until crumbly. Gradually add ice water, mixing until a dough forms.
  2. Shape dough into a disk, wrap, and chill for 30 minutes. Roll out and press into 8 tart molds; pre-bake at 375°F (190°C) for 10-12 minutes until lightly golden.
Make the Pumpkin Spice Filling
  1. Beat cream cheese and sugar until smooth. Mix in pumpkin puree, egg, pumpkin pie spice, vanilla, and a pinch of salt until well combined.
  2. Pour the filling into the pre-baked tart shells.
Bake the Tarts
  1. Bake tarts at 350°F (175°C) for 18-20 minutes, or until the edges are set and the center is slightly jiggly.
  2. Let cool completely on a wire rack, then chill in the refrigerator for at least 2 hours.
Prepare the Caramel Topping
  1. In a saucepan, combine sugar and water; cook over medium heat until sugar dissolves and caramelizes to an amber color.
  2. Carefully whisk in warm heavy cream, butter, vanilla extract, and salt until smooth.
  3. Allow the caramel to cool slightly, then drizzle over the chilled tarts before serving.
