- Rinse the quinoa under cold water.
- In a pot, sauté the onion and bell pepper until softened.
- Add the rinsed quinoa, vegetable broth, and diced tomatoes to the pot.
- Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the quinoa is cooked and liquid is absorbed.
- Fluff with a fork and serve.
Notes
Store leftovers in an airtight container in the refrigerator for about 3-5 days. Reheat with a little broth or water to keep moist. Customize by adding favorite vegetables or spices.
